Q: I see the term "allergens" frequently in the news. What exactly are allergens?

A: An allergen is a product or ingredient containing certain proteins that can potentially cause severe reactions in a food allergic person. The "Big 8" food allergens (FDA) are; milk, eggs, peanuts, tree nuts, fish, shell fish, soy and wheat.



Q: Do Sartori Foods' products contain allergens?

A: Many of our products contain milk. This allergen, and any other, is clearly listed following the word "contains" in bold print under the ingredient statement on the product label.

Ingredients: made from pasteurized milk, cheese culture, salt, enzymes and anti-caking agent.

Q: Are Sartori Foods' products made with rBST/rBGH-free milk?

A: Sartori Foods offers a number of products in both rBST-free and regular varieties. Our rBST-free products currently available for sale include Glacier Point Blue and Gorgonzola cheese, Sartori Reserve SarVecchio Parmesan and SarVecchio Asiago cheese. In early winter of 2008, our signature Sartori Reserve cheese, Bellavitano, will also be available in a make featuring rBST-free milk. Q: Does Sartori Foods' offer Kosher products?

A: Yes, we currently manufacture kosher cheese. We don't however carry it as an inventoried item so it is not readily available. We will make kosher cheese on a customized basis if the volumes warrant it. (Each opportunity needs to be qualified by our sales department.)



Q: Are Sartori Foods' cheeses made using pasteurized milk?

A: All cheese milk is pasteurized in accordance with state and federal regulations.



Q: Can Sartori Foods' cheese products be frozen?

A: Yes, though not recommended. Freezing and thawing may change the body characteristics of the cheese, resulting in clumping or moisture expulsion.



Q: What is the "Italian Cheese Flavor Wheel"?

A: The flavor wheel was developed at Sartori Foods as a visual representation of flavor attributes that may be found in our Italian cheeses. Q: Is your cheese heterofermentative-free?

A: We have many cheeses with very low levels that can be used for heterofermentative sensitive applications such as salad dressings. These specially formulated cheeses assist with the amount of pressure contained in dressing bottles and prevent breakage from expanding gases exuded by other cheeses.



Q: How do you handle bio-security issues?

A: We have an aggressive system of quality control and employ total quality management principles. Additionally, we utilize a stringent HACCP Food Safety Program. We are AIB, NFPA, USDA and WDA Certified.



Q: What is the shelf life of your cheese?

A: The shelf life of cheese will vary according to the type (moisture content, acidity, etc.) and the kind of packaging material used. All Sartori Foods cheeses should be stored at 35 - 40 degrees in the original package or container. Properly stored and unopened, the recommended storage time will range from 120 to 180 days.



Q: What is the shelf life of your cheese after the package has been opened?

A: Once opened, the shelf life will be dependent on the variety and how the cheese has been handled. For recommendations on specific products, contact a Sartori Foods representative.



Q: Are there trans fats in SFC cheeses?

A: A small amount of trans fat occurs naturally in foods such as beef, veal, lamb, and foods containing milk fat, such as butter, whole milk, cream, cheese and ice cream. Foods with less than one-half percent of trans fats per serving will not have trans fats labeled, since that amount is considered negligible.
